The Banana-Egg Pancake

The Gluten-Free Banana-Egg Pancake

Here's What You'll Need:

1 ripe banana
1 egg

Optional Toppings:
Crushed walnuts, almonds, or hazelnuts
Greek yogurt sweetened with Agave syrup, honey, or a sweetener of your choice!

Hand blender (you could also use a whisk!)

Yield: 1 Pancake

How to Make:

1.  Peel the banana and break it up into a bowl.

2. Crack the egg into the bowl and whisk or use a hand blender until smooth (it is much easier to use the hand blender to get that real smooth consistency!)

3. Set a frying pan on your stove and heat on about medium-high. Add some butter and let it melt. Once the pan is hot and the butter has melted, pour your batter into the frying pan. Cook the pancake on both sides until it is golden brown. This shouldn't take too long and be sure to keep an eye out in case your pan gets too hot! I usually turn mine down to medium half-way through cooking to avoid burning!

You can serve the pancake with syrup, honey, chocolate spread, or any other favourite topping! Try it with some sweetened plain greek yogurt and fruit! - This is such a healthy alternative to regular pancakes!
